Acid – Spiced pear – Fennel
Daniel and Nicola Ham were marine biologists before they turned to natural wine. They specialise in sourcing organic English grapes from around the UK, working as naturally as possible with hybrid varieties suited to the English climate.
Field Notes 3 is a zingy, pithy blend of organic Pinot Blanc (92%) from Crouch Vale, Essex, and Chardonnay from Ham Street In Kent. The Pinot Blanc was vinified in three separate ways; direct press, 24-hour whole bunch maceration and hand-destemmed with a 10-day maceration. The Chardonnay was all hand- destemmed and underwent a 10-day maceration. You’ll find intense acidity and tension, and aromas of spiced pear, honey, fennel and lime.
