Lock me up with a case of this and throw away the key pls. We had the pleasure of checking out multiple vintages of Sabots, some older ones from bottle and some recent in cask. Mind blowing. Fermented in amphora, and matured in concrete. Meaty, red fruited and earthy from the start, it’s a complex, alluring assault on the senses that heads down a herbal, peppery route. A wine that builds, builds and builds, and keeps going, and going and going. Jeez. Lucky us. ABV: 12.5%
