Place: Grapes from Minervois but vinified in the Auvergne, France
Grape: Macabeo, Viognier + Sauvignon Blanc
Vibe: Pét-Nat + Friends
A tough vintage meant Catherine had to buy in some grapes. Everything was directly pressed before the fermentation finished up in bottle. It had 9 months to rest before being disgorged. Now after a little snooze in the cellar this has found its feet. The sun kissed fruit of the south has now gone all golden whilst still retaining some nice acidity. Fine bubbles and a salty finish are an added bonus. Drink cold and fast! ABV: 12.5%
