Apparently if you say “Poolside” in an Aussie accent it sounds like Poulsard. Hence, Tom has taken Barossa Shiraz and tried to handle it as gently as possible to try and achieve something Jurassien. He’s done a very good job. The flavour spectrum might be a little different but drinkability and texture have been achieved. Colour too. It’s rosé or light red depending on your mood. Bright and rhubarb led, there are wisps of pepper and herbs galore. Would make for very good poolside drinking too. Drink cold!
